This small producer is located 850 meters above sea level in the most western region of the do.

At an elevation of 850m above sea level, Ermita de Nieve is in the most western part of the D.O. giving the wines great tropical fruit similar to a NZ sauvignon blanc with added minerality. Ermita de Nieva plants virtually nothing but Verdejo in the town of Nava de la Asuncion near Segovia. Not one splinter of oak is even considered in making their wines – fermentation is all done in stainless steel. Crisp, clean and refreshing, this is the future of Spanish whites.
